re: tinned fish, I ate so many sardines a while back I made myself sick of them, but it was wild to read “what’s a good sardine” and seeing people recommend shit that’s like, $18 for a few tins. They can’t be that fucking good! What is so different about them vs. the ones at Aldi that are like 60¢ a pop? Certainly not enough for that markup.
my partner announced in the gc of our hotgirl friends that he’s gonna make iriko (sardine) sake and i’ve never seen someone target an audience so effectively
got to the end of making basic pasta w/ tomato sauce for dinner and added sodium citrate with the parm which turned it into this glossy emulsion that’s great except a little too salty now
also used better than bouillon sofrito instead of chopping vegetables for mirepoix so it’s just a really lazy glorified spaghetti-o sauce
